Preheat oven to 400℉. Place a wire rack in a rimmed baking sheet. Line another baking sheet with parchment paper.
Place bacon slices on the wire rack and bake for 15-20 minutes until bacon is crispy.
In a heavy saucepan, boil honey and vinegar together until mixture reaches 300℉ on a candy thermometer (hard crack stage.)
Using tongs and working quickly, dip each piece of bacon into the honey mixture to coat and lay on a parchment lined baking sheet. Sprinkle with sesame seeds. Store in refrigerator until hardened and ready to eat.
