Bacannoli Candy

Ingredients

Filling:

  • 8 oz Neufchatel cheese or reduced fat cream cheese
  • 1 1/2 cup heavy whipping cream
  • 1/3 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup mini semisweet chocolate chips, plus more for garnish

Bacannoli Shells:

  • 16 slices thin cut bacon cut in half
  • 1/2 cup packed brown sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 400℉. Place a wire rack in a rimmed baking sheet.

  2. Beat together first 4 ingredients on medium speed for 2 minutes until smooth. Stir in chocolate chips. Transfer to a piping bag or a gallon plastic storage bag and refrigerate until ready to use.

  3. If you don’t have cannoli tubes, use aluminum foil to make a foil snake about 1” in diameter.

  4. Mix together brown sugar and cinnamon.

  5. Pat sugar mixture onto both sides of bacon slices, then wrap the slices around cannoli tubes to form shells. Place on prepared wire rack with seam side down.

  6. Bake for 20 minutes until bacon is crispy and caramelized. Remove from pan and let cool.

  7. Remove filling mixture from refrigerator and snip off corner of filling bag making sure hole is big enough for mini chocolate chips to pass through. Pipe filling into bacon cannoli shells and sprinkle ends with more chocolate chips. Keep refrigerated until ready to serve.
