Preheat oven to 400℉. Place a wire rack in a rimmed baking sheet.
Place bacon slices on the wire rack and bake for 15-20 minutes until bacon is crispy. Let cool.
While bacon is cooking, prepare chocolate. In a heat-proof glass bowl, melt chocolate, vanilla, and coconut oil together until smooth, stopping to stir every 30 seconds. Keep warm.
Dip cooked bacon slices into the chocolate using a spoon to coat completely. Lay on wire rack and sprinkle with garnish.
